Generally, a cow will weight around 1,000 lb when going to the butcher. After the butcher has removed portions of cow that will not be turned into cuts, the hanging weight is determined. This will be about 60% of the starting weight. Then the meat is aged and then cut. The end amount will be around 40% or your starting weight.
